Method
Prepare water between 70º – 80° C. Add one half teaspoon (approx. 1 – 1.5 grams) of matcha per 70ml – 90ml of water. Whisk back and forth until a creamy froth coats the surface. Use soft, filtered water for best results.

Japanese Matcha
Deep within a silent maple forest lies a perfectly still pond. Kawaguchi’s loneliest koi breaks the surface, briefly animating the forest’s reflection into lively company. From above, the pond shimmers in vivid hues of amber and scarlet, but its riotous beauty remains unperceived from within. Falling temperatures persuade a harvest spider to descend from its home at a higher vantage. Its fragile frame wavers precariously with the slightest airflow; keeping company near ravenous koi is to dance with oblivion, and so it shelters safe in the damp leaf litter of a mossy shrine. The canopy isolates these consociates – until the depths of winter. Through the spindled remains of the forest, Fujisan bears witness to their solitude and, in its patent observation, paradoxically quells it. The magnificent sentry presides over the land of the lonely koi and harvestman with profound omniscience. This duty will be briefly entrusted to the lush growth and embracing warmth of summer, only for Fujisan to reappear as sentinel, once again, to those exposed by winter.
