Prepare water to 90° C. Add one heaped teaspoon of tea leaves per 500ml. Steep for 2 minutes minimum

English Breakfast
Travelling across the Sapphire Isle, breakfast is often served with a view of rolling tea plantations. Sri-Lankan pancakes are proudly presented with spicy sambal or sticky fillings of coconut treacle tapped from the kitul palm. A ‘wood apple’ juice (ordered out of curiosity) is enthusiastically served. Well . . . Curiosity satisfied, and never to return, a traditional Orange Pekoe tea with subtle notes of baked apple will be the reliable complement to all meals henceforth.
