Ingredients
Black Tea, Ginger, Cinnamon, Cloves, Cardamom. 35 serves – 75g
Tasting Notes
Cinnamon, Cardamom, Ginger, Cloves
Method
Prepare water to 90° C. Add one heaped teaspoon of tea leaves per 500ml. Steep for 2 minutes minimum
Or low simmer on stove for 15 minutes in 1 part soy milk 1 part water
Description
Stepping over shards of crushed clay, delicacy is abandoned and, crunching underfoot, a path is pursued to the chai wallah nearby. Savoured in tiny sips, a perfect balance of spices will incite a morning obsession for the remainder of the trip. Locals drink unceremoniously and cast their cups to the ground. Go on and join them – it seems a shame but, swept and remoulded, the shards will be reborn with purpose and appreciation soon enough.
